+ What temperature should I use for Neapolitan pizza?

Aim for 800–900 °F; the pie should finish in 90–120 seconds.

+ Do I need to season a new pizza stone?

No. Wipe with a damp cloth and run the oven at 600 °F for 30 min to burn off packing dust.

+ Wood or gas—does flavor change much?

Wood adds light smokiness and leopard-spot char. Gas is cleaner, easier, and still reaches 950 °F.

+ How do I keep dough from sticking to the peel?

Dust peel with 50/50 flour & semolina, launch within 30 sec, and avoid soggy toppings.

+ Can I leave my pizza oven outside in winter?

Yes—if it’s stainless or powder-coated. Cool completely, brush ash, and cover with a breathable waterproof cover.
